Mast Brothers Chocolate

While our counters were being measured for our new stone (hooray!), I came across these photos of the Williamsburg factory where the Mast Brothers make their chocolate, from bean to bar. We were pretty dedicated to home improvement tasks (painting the kitchen “chocolate froth,” appropriately) this weekend–and avoiding the “arctic blast” that infiltrated the city–but we’ll definitely have to run over to Williamsburg on a Saturday or Sunday, when its doors are open to the public. The impressively bearded brothers hand-craft each bar with cacao from small family farms and coops. 
 These photos are from The Selby; they’ve documented the entire process in lovely detail. I’ve seen the bars at Marlow & Sons–such beautiful packaging, they’re hard to miss. I think I’d like the one with fleur de sel, please.
