In Season: Shoyu Chicken and Bok Choy

Hello! Courtney from Fork to Belly here, sharing with you one of my favorite recipes from my hometown of Honolulu, Hawaii: Shoyu Chicken and Bok Choy! I love this dish to bits. It’s simple and prep is quick and easy. It all comes together in a slow cooker, which means you can throw everything together in the morning and come home to a hot and delicious meal waiting for you. What’s not to love? I hope you’ll enjoy this wonderful dish.

Shoyu Chicken and Bok Choy

Serves 4-5

1 package boneless, skinless chicken thighs

4-5 baby bok choy

2 cups soy sauce

1 1/2 cups brown sugar

1/2 cup water

1 tsp white vinegar

1/2 cup green onion, chopped

2 tbsp ginger, chopped

1/2 tsp black pepper

For the chicken:

Add soy sauce, brown sugar, water, vinegar, ginger, onion, and pepper to a slow cooker. Thoroughly stir, then add the chicken thighs, ensuring they are completely submerged. Cover and cook on high for 3-4 hours, then continue to cook on low for another 6-7 hours. (Alternatively, you can remove the chicken and transfer the sauce to a pan. Cook the sauce on medium-high heat until it reduces and thickens up.)

For the bok choy:

Fill a large pot with water and bring to a boil. Chop off the bottom of each bok choy and submerge the leaves in the boiling water. Cook for 1 minute, then remove from the pot immediately and transfer to a bowl filled with ice water to stop the bok choy from cooking. After a few minutes, strain then let dry before serving.

Serve with a big scoop of rice and dig in!

Every year we make a point to drive into the western Sierra foothills of El Dorado County and pay a visit to Apple Hill. An hour from Davis, an hour from Tahoe, with a mix of orchards, vineyards, and pine tree groves, it’s a beautiful place to drive around when the crowds are low. Weekends this time of year tend to gridlock the roads, but last Sunday was cold and wet—maybe a little too wet, even—so the crowds were kept at bay.

A recipe for good skin

The first time I got serious about skin care was in the year leading up to our wedding. A sudden surge of magazine reading about bridal boot camps and photo-ready faces prompting me to take a closer look at my habits—and they weren’t very good.
I spent much of high school rowing without giving sunscreen a second thought. And it wasn’t too long ago that Aron and I were digging ourselves beach chairs out of sand in efforts to get tan on a vacation. (I shudder.)
